Chef pouring SaltSwan's Angel Food Cake


 


6 Eggs, separated
1 1/2 Cups Sifted Sugar
3 Tablespoons Lemon Juice
1 1/2 Teaspoons Grated Lemon Rind
1 1/4 Cups Potato Starch (Do not Use Potato Flour)
1/4 Cup Boiling Water
 

Add lemon rind and lemon juice to boiling water and set aside. In mixing bowl, beat egg yolks until light yellow and then add sugar gradually until well blended. Add lemon water to the egg mixture and mix until blended. Fold in potato starch and set aside. In another mixing bowl, beat egg whites until still peaks form and then fold into the cake mixture. Place Angel food cake mixture into a 10 inch tube pan and bake at 300 for 30 minutes and then increase heat to 350 and bake 40 minutes longer. Invert cake pan and allow to cool .

This Angel Food Cake is great served with fresh strawberries and whipped cream.
